Tastes of Tamworth: Ep 1 – Eau de Musc

Tamworth Distilling was founded in 2015 by Steven Grasse, and it operates under a wilderness-to-bottle model. They distill their own neutral grain spirit base from local organic corn, organic rye, and malt. All of their grains are sourced from farms within a 150 mile radius, and the water comes from the Ossipee Stratified Aquifer, one of the purest sources on the East Coast. Steve Grasse is an American advertising executive, author, distillery owner and the founder of Quaker City Mercantile. In 1999, Grasse partnered with William Grant & Sons to create Hendrick’s Gin. He also helped to create Sailor Jerry Rum.

EAU DE MUSC

“Eau de Musc proudly features an old-world flavoring technique that uses the oil extract from the castor gland of the North American beaver, which exudes a leathery, raspberry taste, and acts to fortify the whiskey flavors. The full-bodied, two-year aged bourbon whiskey has a bolstered mouthfeel with a vanillin nose and notes of spice. The addition of birch oil, raspberry and Canadian snakeroot, a woody spice akin to ginger, comingle with the natural fruitiness of the castorerum, making the finish warm, crisp, and incredibly palatable.

“New Hampshire life is ruled by the wilderness, and beavers are widely prevalent, extremely territorial, and prone to overpopulation. Therefore, rural communities like Tamworth work with licensed and responsible trappers to manage the population in order to sustain the local ecosystem. To source the castoreum for the limited-edition release, the Tamworth Distilling team works with Anton Kaska, a professional trapper and outdoor skill instructor who is known for his commitment to sustainable practices. Anton provides the distillery with the castoreum sacs, which would otherwise be discarded, to produce the infused bourbon whiskey.” http://tamworthdistilling.com/spirits/house-of-tamworth-eau-de-musc/

Castoreum (kæsˈtɔːriəm) is a yellowish exudate from the castor sacs of mature beavers. Beavers use castoreum in combination with urine to scent mark their territory. Both beaver sexes have a pair of castor sacs and a pair of anal glands, located in two cavities under the skin between the pelvis and the base of the tail. https://en.wikipedia.org/wiki/Castoreum
